Bake a moist banana walnut loaf in an 18 cm tin with just one egg.

Before you begin
A split banana on top caramelises as it bakes and marks where to cut the first slice. Press the topping only lightly into the surface; the weight of the fruit will settle it further during the bake.
Method 做法
Cream the butter and banana
Beat the softened butter until pale. Beat in both sugars, then the ripe banana, until smooth. Add the beaten egg a little at a time and mix in the milk.

Fold in the walnuts
Sift the cake flour, baking powder and baking soda into the bowl. Mix just until nearly uniform and finish with a spatula. Fold in the chopped walnuts.

Top the loaf
Grease or line an 18 cm loaf tin. Fill with batter and smooth the surface. Set the half banana on top with the cut face up, press it in lightly and sprinkle with a little sugar.

Bake and cool
Bake in a preheated oven at 180°C (356°F) for 30–40 minutes. Check the crumb beside the banana rather than through the wet fruit. Unmould and cool before slicing.
