Before you begin
Season on the plate so the egg mixture goes straight into the pan.
Method 做法
01
Beat the eggs
Crack the eggs into a bowl and beat until yolks and whites come together. For this version the eggs go into the pan without milk or salt.

02
Form the curds
Melt a little butter in a frying pan over medium heat. Pour in the eggs. As the edges start to set, push them gently toward the middle with a spatula so the uncooked egg flows onto the exposed pan.

03
Finish and serve
Repeat in slow strokes until the eggs form soft curds and no liquid egg remains. Transfer straight to a plate and add salt and pepper to taste.

✦How can I make larger, soft curds?+
A sweeping push makes larger curds than stirring rapidly. Keep the serving plate nearby so the eggs do not continue cooking in the hot pan.
