Before you begin
Baked in a tall 6-inch tin, it is particularly light warm and firmer after chilling. Large chocolate chunks sank in the original bake. Choose smaller pieces if you want more to stay near the top.
Method 做法
Melt the cheese and chocolate
Separate the eggs and chill the whites. Stir the cream cheese over a water bath until smooth, gradually mix in the milk, and stir in the butter. Remove from the heat and add the chocolate, stirring until melted.

Mix and strain
When comfortably warm, stir in the yolks. Sift in the cake flour, cocoa and cornstarch. Whisk until smooth, then strain. Line a tall 6-inch tin, about 16 × 8 cm, with paper that reaches above the rim.
Fold the meringue
Beat the whites with salt and lemon juice. Once foamy, add the sugar in three additions. Stop at soft peaks. Loosen the chocolate mixture with some meringue, then fold into the remaining whites. Pour into the tin; add small chocolate pieces if using.

Water-bath bake
Place the tin in a hot water bath. For an oven with a single temperature control, the creator suggests 150°C (302°F) for 30 minutes, then 110°C (230°F) for 70 minutes. Cool in the tin for about 10 minutes before releasing carefully. Serve warm or chill for a firmer texture.
