Before you begin

Pull the espresso first, steam the milk until glossy, then bring the two together in a steady pour. A rounded cup with enough room for both espresso and milk makes it easier to control the final pour.

Method 做法

01

Prepare the espresso

Grind the coffee for your espresso machine. Fill and distribute the grounds evenly in the basket, tamp level and lock the portafilter into place. Brew into the serving cup.

02

Steam the milk

Pour the cold milk into a steaming jug. Purge the wand, then position the tip close to the surface to introduce a little air. Lower it slightly to circulate the milk, aiming for a fine glossy texture rather than large bubbles.

03

Pour the latte

Swirl the milk to combine the foam and liquid. Pour a thin stream into the espresso, then lower the jug near the surface as the cup fills. Finish with the foam on top and serve immediately.

✦When should I swirl the steamed milk?
Swirl the milk just before pouring. If it waits in the jug, the foam starts separating from the liquid.
