Before you begin
The filling is stirred rather than whipped, so it stays thick and creamy without eggs or an electric mixer. Adjust the water in the espresso dip to suit the strength of your brew; cool it before assembling so it doesn’t warm the mascarpone.
Method 做法
Prepare the espresso dip
Pull 40 ml espresso from the coffee, pour into a shallow dish and add the hot water and 12 g sugar. Stir and cool to room temperature before dipping the biscuits.

Stir the cream
Mix the mascarpone with 25 g sugar. Add the cream and stir until smooth and combined. The filling does not need to be whipped.

Layer two portions
Spoon a little cream mixture into the base of each small bowl. Cut the ladyfingers to fit, dip them into the cooled coffee and lay them on the cream. Repeat with more cream and dipped biscuits; finish with cream.

Dust and serve
Sift cocoa over each cup just before serving. These are intended to be eaten straight away, while the coffee and cream are still distinct layers.
