Before you begin

A spoonful of honey goes into the batter; butter and maple syrup finish the crisp browned top. If you don’t have a pan the size you want, the video shows a strip of folded foil formed into a ring to hold the batter.

Method 做法

01

Whisk the wet ingredients

Mix the egg, sugar and honey until evenly combined, then whisk in the milk.

03

Cook the first side

Pour the batter into a small pan set over low heat. Cover with a suitable lid and cook for about 6 minutes so the middle has time to set.

Turn and serve

Flip carefully and cook for another 2 minutes. Serve with butter and maple syrup. For the café-style design in the video, mark the cooked surface with a cake stamp before adding the butter.

✦How much does this recipe make?
The recipe quantities make one pancake. The tall shape comes from confining the batter to a small pan rather than letting it spread thinly.
