Before you begin
Resting and straining the dorayaki batter gives it an even surface that colours beautifully in the pan. Pour from the same spot in the pan and let the batter spread itself to make round, matching halves.
Method 做法
Cook the beans
Simmer the red beans in water until tender enough to crush easily, about 1½–2 hours. Drain, reserving some cooking water. Return the beans to the pan with the rock sugar and slab sugar and enough cooking water to loosen them. Stir until the sugars dissolve and the paste holds a mound. Cool.

Rest the pancake batter
Lightly whisk the eggs, sugar and honey. Sift in the flour and baking soda and stir gently. Add the milk a little at a time, strain the batter, stir in a little corn oil and rest for about 15 minutes.

Cook even rounds
Lightly oil a pan and wipe away the excess for an even brown finish. Pour small rounds of batter. Cook until bubbles spread across the surface, about 1½–2 minutes on the first side in the video. Flip and finish the other side briefly.

Sandwich and serve
Match pancakes of similar size. Place red bean filling on the lighter side of one and cover with the other, browned sides facing out. Press gently around the rim to shape.
