Before you begin

The original bake uses separate upper and lower oven heat. The original video gives individual oven settings. Its timing is tied to that setup and to the depth of the dish.

Method 做法

01

Prepare the dish

Lightly grease an ovenproof soufflé dish and preheat the oven. The recipe uses separate heat controls, set to 130°C above and 160°C below.

02

Whip the egg whites

Beat the whites in a clean bowl, adding the sugar in three portions. Continue until the meringue holds stiff peaks. Add the yolk and fold gently until evenly incorporated.

03

Shape and bake

Spoon into the greased dish, mounding the foam as shown. Bake for 35–40 minutes at the stated upper and lower temperatures. If the top colours while the base is still underdone, loosely shield the surface with foil and continue baking.

✦When should I prepare the dish and oven?
Have the dish and oven ready before whipping the whites. This foam starts losing volume if it waits on the counter.
