Before you begin

Fill the rounds with a sausage patty, fried egg and cheese. Use the same ring for the pancakes and the egg so the layers stack evenly.

Method 做法

01

Rest the pancake batter

Mix the flour, baking soda and sugar. Stir in the milk, 15 g beaten egg and melted butter until no dry flour remains. Rest at room temperature for 15 minutes.

02

Make the maple bits

Heat the maple syrup in a small pan until concentrated enough to harden on cooling. Tip onto baking paper and let it cool completely. Break it into small crumbs.

03

Griddle the pancakes

Oil a frying pan and the inside of an 8 cm ring. Heat gently and add batter to the ring with half the maple crumbs tucked into the middle. Cook until the surface sets and bubbling subsides, then turn and finish the second side. Repeat for the second cake.

04

Cook and assemble the sandwich

Fry the whole egg in the oiled ring, breaking the yolk. Cover and cook through. Pan-fry the sausage patty until cooked through. Stack cheese, sausage and egg between the two warm pancakes and serve.

✦Why chill the maple pieces?
The maple crumbs need to be cold and firm before they go into the batter. As the pancake cooks they form small sweet pockets.
