Before you begin
Three sponge layers hold sliced strawberries inside. Reserve enough whipped cream for piping before you start coating the sides of the cake.
Method 做法
Whip the sponge
Warm the eggs, extra yolk, sugar and honey together over a water bath to about 40°C. Warm the butter and milk separately to about 60°C. Whip the eggs until pale and thick enough for a ribbon to remain on the surface. Finish at low speed to even out the bubbles.

Bake and split
Sift in the flour and fold gently. Mix a small portion of batter into the warm butter and milk, then fold back into the main bowl. Transfer to a lined 6-inch tin. Bake at 150°C (302°F) for 30–35 minutes. Cool, trim the top and bottom if needed and cut into three even layers.

Fill with fresh strawberries
Whip the cream with the icing sugar until it holds shape. Lightly brush a sponge layer with cooled syrup if using. Add cream and sliced strawberries, cover with the second layer and repeat. Cover the cake with a thin, smooth coat of cream.

Give Santa a face
Cover the upper part of the top with halved strawberries for the red hat. Pipe cream for the hair, hat trim and beard. Add two blueberries for eyes, finish with a light dusting of icing sugar and refrigerate until serving.
