Before you begin

This pulse-pour method uses short pauses, letting the coffee bed drain between additions. Use the three minutes as a guide; your grind and pouring speed affect how quickly the bed drains.

Method 做法

01

Prepare the filter and coffee

Fold and seat a V60 paper filter in the dripper over a cup or server. Rinse it with hot water and discard the rinse water. Grind 15 g coffee for pour-over, add it to the filter and level the bed.

02

Wet the grounds

Place the dripper and server on a scale and tare. Start the timer. Pour a little of the measured hot water over the grounds so all the coffee is wet, keeping the stream inside the edge of the filter.

03

Pulse-pour to 225 g

Continue pouring in small rounds, pausing briefly between pours so the water level drops. Aim the stream over the coffee rather than down the bare paper. Stop when the scale reaches 225 g and let the bed drain, aiming for a total brew around three minutes.

Serve

Remove the dripper, gently swirl the brewed coffee in the server and pour while hot.

✦Does rinse water count towards the brew ratio?
The 1:15 ratio refers to dry coffee and total brew water. Rinse water goes down the sink and is not part of the 225 g.
