Before you begin

Plump raisins and brown sugar round out the flavour, while the edges turn crisp in the oven. Cake flour gives a tender cookie. With all-purpose flour the bite is a little chewier.

Method 做法

01

Soften the oats and raisins

Combine the oats and milk and microwave for 2–3 minutes until most of the milk is absorbed. Leave some texture to the oats and set aside to cool. Soak the raisins in hot water for about 10 minutes, then drain well.

Cream the butter

Beat the butter until smooth and paler in colour. Mix in the two sugars and salt. Sift in the cake flour and baking powder, then add the cooled oats.

Finish and portion the dough

Add the egg gradually, mixing each addition in before adding more. Fold in the raisins. Use two spoons to portion roughly 50 g mounds of dough; the batch makes about six.

Chill and bake

Refrigerate the portions for 30–60 minutes. Once firm, roll gently into balls and arrange on a lined tray. Bake on the middle rack at 180°C for about 15 minutes, then let the cookies cool a little.

✦When should I add the egg?
The egg goes in after the flour and oats in this version. Add it in small amounts so the mixture stays together.
