Before you begin

The golden crumb shell gives way to a soft milky centre. An even coat around the corners helps keep the soft filling inside during frying.

Method 做法

01

Cook the filling

Whisk the sugar and 35 g cornstarch into the cold milk. Heat gently and stir continuously, scraping the base. Once thick enough to hold a trail, scrape into a lined or lightly oiled container and smooth the top.

02

Chill and portion

Cover and refrigerate until the block is completely cold and firm enough to cut. Turn out and cut into even small bars or squares.

03

Coat the pieces

Dust each piece with cornstarch, dip in beaten egg and coat all sides with breadcrumbs. Press the crumbs on gently so the edges are covered.

04

Fry and serve

Heat neutral oil in a deep pan. Fry a few pieces at a time until the coating is crisp and golden. Lift out, drain, and let the pieces cool briefly before biting into the hot centre.

✦How do I keep the custard firm while breading it?
Keep the custard cold while breading. A soft or warm filling is difficult to turn in the egg without breaking.
