Before you begin

Freeze the mousse until solid for a clean release, then thaw in the fridge before serving. The moulded pattern is sharpest if the cakes are frozen solid before you peel the silicone away.

Method 做法

01

Prepare the juice and gelatine

Blend or crush red dragon fruit and strain it. Weigh out 150 g juice and combine with the yogurt. Meanwhile soak the gelatine sheets in cold water for about 10 minutes.

02

Make the mousse

Work the softened cream cheese until smooth, then mix in the sugar. Stir in the dragon fruit yogurt in portions, followed by the cream. Squeeze the water from the gelatine. Dissolve it gently and mix it through the mousse without leaving any strands.

03

Fill and freeze

Transfer to a pouring jug, fill the moulds carefully and cover. Freeze for at least six hours, until the mousse is solid through the centre.

Unmould and thaw

Release the cakes while still frozen. Transfer to the refrigerator at about 4°C (39°F) and allow roughly one to two hours to thaw for the small portions shown. Serve chilled.

✦Should I weigh the whole fruit or the strained juice?
Weigh the strained juice, not the whole fruit. This keeps the amount of liquid in the mousse consistent.
