Before you begin

The yolk mingles with the sauce when the pasta is served. Take the pan off the direct heat before adding the egg sauce; vigorous heat will scramble it.

Method 做法

01

Mix the egg and cheese

Beat the two eggs with the grated cheese and black pepper. Have the cooked onsen egg ready to serve so the pasta can go straight to the table.

02

Cook the bacon and pasta

Cut the bacon into pieces and cook in a frying pan. Add chopped onion and cook until soft. In a separate pot, cook the spaghetti in salted water according to the packet, keeping a little of its cooking water.

03

Coat off the heat

Toss the hot drained spaghetti with the bacon and onion. Take the pan off the heat before adding the egg and cheese. Toss continuously, loosening with a little pasta water until the sauce coats the strands.

04

Finish and serve

Pile onto a plate or into a shallow bowl, add black pepper and top with the onsen egg. Open the egg at the table so the yolk runs through the pasta.
