Before you begin

The creator’s tasting note suggests cooking the pearls separately for better control over sweetness. Add the syrup to the inside of the glass before the milk. Stir only when ready to drink if you want to keep the stripes visible.

Method 做法

01

Cook the pearls

Boil the tapioca pearls in plenty of water following the directions for your variety. Cook until chewy all the way through, then drain.

02

Make the dark syrup

Heat the 100 g water and black sugar together, stirring to dissolve. Simmer until syrupy. Toss the cooked pearls with enough syrup to coat, keeping some syrup for the sides of the glass.

03

Make the tiger stripes

Spoon the coated pearls into a glass. Drizzle some syrup around the inside near the rim so it runs downward in dark trails. Pour in the cold milk and serve immediately.
