▶ Watch the recipe
Before you begin
Fill with coconut cream and finish the outside with a light coat of shredded coconut. Do not add the coconut milk to the filling until the cream has already thickened.
Method 做法
Make the coconut base
Whisk the corn oil and 80 ml coconut milk until emulsified, then sift in the cake flour and mix smooth. Line a 28 × 28 cm baking tray with baking paper.
Whip and fold
Whip the egg whites with the lemon juice, adding the 50 g sugar in three portions. Stop when the whisk leaves clear tracks and the foam holds its shape. Fold into the coconut base. Spread into the tray, guiding the batter right into the corners.

Bake a pale sponge
Bake on the middle shelf at 140°C (284°F) for about 30 minutes. If the surface starts browning near the end, cover loosely with foil. Cool on a rack, then turn out and peel away the baking paper.

Fill and roll
Whip the cream with the icing sugar. Once thick, add 20 ml coconut milk and beat until it holds its shape. Reserve about 30 g whipped filling for the outside. Spread the rest over the sponge, leaving the cream slightly higher along the starting edge. Roll up with baking paper and refrigerate about 30 minutes.

Finish with coconut
