Before you begin

One apple makes about four roses, with an optional honey wash for the petal edges. Grease the tin directly for smooth sides. A paper liner will leave fluted marks on the pastry.

Method 做法

01

Prepare the apple and pastry

Slice the apple thinly enough for the pieces to bend as you roll. Let the frozen puff pastry soften just until pliable, about 10 minutes in the video. Blot any condensation from the sheet.

02

Build the petals

Mix the sugar with the ground cinnamon. Sprinkle over the pastry and spread evenly. Arrange the apple slices in overlapping rows with the curved edges extending above the pastry strips.

03

Roll each rose

Cut the pastry into strips along the rows of apples. Fold each strip lengthwise over the bottom edge of the apple slices, then roll gently from one end. Set each rose upright in a lightly oiled muffin well.

Bake and finish

Bake at 190°C (374°F) for about 40 minutes. Let cool slightly before lifting out. For the rosy finish shown, mix a little red yeast rice powder with water and honey, then brush it lightly over the apple edges.

✦How thin should the apple slices be?
Thin, overlapping slices bend into a continuous spiral. If a slice cracks when bent, slice the next one thinner.
