Before you begin

Slicing the breast into even halves helps it cook at the same rate throughout.

Method 做法

01

Prepare the vegetables

Cut the broccoli into florets and trim the enoki mushrooms. Cook the vegetables first until tender, then drain well so the parcel does not fill with excess water.

02

Build the parcel

Split the chicken breast horizontally into thinner, even pieces. Arrange the chicken and cooked vegetables on baking parchment. Season with rosemary, salt and pepper. Fold the paper over and crimp the edges to seal.

03

Bake and check

Place the parcel on a tray and bake in a preheated oven at 170°C (338°F). Start checking at about 13 minutes, the time shown for the thin pieces in the video. Continue until the centre of the thickest piece reaches 74°C (165°F). Open the parcel away from you to release the steam.

✦How do I know the chicken is cooked?
A thicker breast needs longer than the video timing. Check the centre of the chicken itself, rather than the hot vegetables next to it.
