Before you begin

A foil cover partway through baking helps the matcha branches keep their green colour. Keep the foil clear of the piped ridges when covering the tray. Its purpose is to shield the green surface from excess browning.

Method 做法

01

Cream the butter

Let the butter soften until a spatula presses into it easily. Beat with the icing sugar until pale and fluffy, about 2–3 minutes. Add the room-temperature milk gradually, beating between additions.

02

Colour the dough

Sift in the flour and fold until no dry patches remain. Weigh 50 g of this plain dough into a separate bowl and mix in the cocoa. Fold the matcha into the rest.

03

Pipe trees

Transfer the two doughs to separate piping bags fitted with medium eight-point star tips. Pipe short cocoa trunks across a lined tray, then pipe the green branches from the treetop down, overlapping the trunk so the parts bake together.

04

Bake and dust

Bake in a preheated oven at 150°C (302°F) for 10 minutes. Cover loosely with foil and bake for another 15 minutes. Cool completely before dusting with icing sugar.

✦What makes the dough easier to pipe?
Cold butter makes stiff dough that is hard to pipe. In winter, soften the butter and temper the milk gently before mixing.
