Before you begin

A lidded cast-iron pot traps the loaf’s steam for the first half of the bake. Start with the lid on to trap steam. Removing it for the second stage lets the crust take on colour and crisp up.

Method 做法

01

Make the poolish the day before

Mix the water, yeast and flour in a tall container with room for it to rise. Cover and leave at room temperature for about 2 hours until doubled, then refrigerate overnight.

02

Mix and fold

Combine the final dough ingredients and poolish. Mix until evenly hydrated, cover and rest for 20 minutes. Lift an edge and fold it towards the centre, working around the bowl. Make three sets of these folds, with 20-minute rests between the sets.

Proof and shape

After the third fold, cover for about 1 hour until doubled. Fold once more, dust with flour and turn onto the work surface. Fold the edges to the centre, turn over and round the loaf. Put it in a cloth-lined bowl, cover and proof for 1–2 hours until doubled.

04

Heat the pot

About 30 minutes before the proof ends, preheat a lidded oven-safe cast-iron pot at 230°C. The video uses a 22 cm round cocotte. Turn the loaf onto baking parchment and score the surface.

05

Bake covered, then uncovered

Lift the loaf into the hot pot using its parchment, cover and bake at 220°C for 20 minutes. Remove the lid and continue for about 20–25 minutes, until the crust is browned. Transfer out of the pot to cool before cutting.

✦When is the poolish ready for the fridge?
The poolish should visibly expand before it goes into the fridge; use a container tall enough to see the change.
