Before you begin

Dark chocolate and cocoa flavour the batter without any mushroom ingredient. Deep moulds need longer than ordinary muffin wells. Check the thickest part before unmoulding.

Method 做法

01

Melt and mix

Gently melt the butter and chocolate together. Mix in the milk, then add the measured egg once the mixture is no longer hot. Whisk in both sugars.

02

Fold in the flour

Sift the cake flour, cocoa and baking powder into the bowl. Fold gently until the batter is evenly chocolate-coloured, scraping the base of the bowl.

03

Fill, bake and release

Spoon into the prepared mushroom mould or small muffin cups. Bake in a preheated oven at 170°C (338°F). The larger mould shown, about 10 × 5 cm, took 35 minutes. For small cups, begin checking around 25 minutes. Cool enough to handle before unmoulding.

✦Should I use the whole egg in this small batch?
Weigh 35 g from a beaten egg rather than adding a whole large egg. An extra spoonful of liquid makes a difference in this small batch.
